COMPARATIVE ANALYSIS OF THE WATER SOLUBLE PROTEIN CONTENT OF GRANNY SMITH APPLE AND FUJI APPLE
Abstract
The apple is a pomaceous fruit of the apple tree. There exist different types of apples with different size and shape. This research was based on fuji apple (local apple) cultivated in Cameroon and the foreign granny smith apple. Both types of apple contain significant amount of water soluble protein.
Despite this, we cannot afford the foreign apples because of lack of resources such as money to purchase them. Thus, a proposed solution is to compare the water soluble protein content of these apples to determine which is richer in protein than the other.
This research was carried out using simple basic techniques of protein extraction and quantification to measure the total amount of water soluble protein in the two types of apples. This was initiated by the maceration of the weighed apples in two different mortars and centrifuge at 1200rpm.The supernatants were collected and used to measure the concentrations of the test samples by Bradford assay.
The results of the experiment shows that 5g of fuji apple contain 3.0mg of water soluble protein while 5g of granny smith contain 5.25mg.
From the analysis of the experiment, the granny smith apple is richer by 2.25mg of water-soluble protein than fuji apple. Some recommendations were made to improve the quality and quantity of the two different species of apple.
